  • (2) 16oz bags of Zatarain’s Crab Boil
  • 4oz bottle of Zatarain’s liquid boil
  • 3 Lemons, halved
  • 3 Oranges, halved
  • 3 Onions, halved
  • 3 Garlic Bulbs, whole with root cut off
  • 12oz jar of pickled jalapenos
  • 2 sticks of butter
  • 3lb bag of red potatoes
  • 6-count pack of frozen mini ears of corn on the cob


  1. Purge crawfish until the water runs clear.
  2. Add 30 quarts of water to a 62-qt pot. Add the Zatarain’s crab boil, Zatarain’s liquid boil, butter, and the whole jar of jalapenos with juice.
  3. Place the lemons, oranges, onions, and garlic in a mesh bag and add to the pot. Boil for 10 minutes.
  4. Remove the bag and add potatoes. Boil for 15 minutes.
  5. Add sausage, mushrooms, and crawfish. Bring to a boil.
  6. Cut off heat and add frozen corn. Soak for 15 minutes.
  7. Remove the basket and pour on onto a serving table.
