The McWilliams Crawfish Boil
A fresh take on the classic crawfish boil from the McWilliams family.

Ingredients
- (2) 16oz bags of Zatarain’s Crab Boil
- 4oz bottle of Zatarain’s liquid boil
- 3 Lemons, halved
- 3 Oranges, halved
- 3 Onions, halved
- 3 Garlic Bulbs, whole with root cut off
- 12oz jar of pickled jalapenos
- 2 sticks of butter
- 3lb bag of red potatoes
- 6-count pack of frozen mini ears of corn on the cob
Directions
- Purge crawfish until the water runs clear.
- Add 30 quarts of water to a 62-qt pot. Add the Zatarain’s crab boil, Zatarain’s liquid boil, butter, and the whole jar of jalapenos with juice.
- Place the lemons, oranges, onions, and garlic in a mesh bag and add to the pot. Boil for 10 minutes.
- Remove the bag and add potatoes. Boil for 15 minutes.
- Add sausage, mushrooms, and crawfish. Bring to a boil.
- Cut off heat and add frozen corn. Soak for 15 minutes.
- Remove the basket and pour on onto a serving table.
