Spinach & Feta Frittata

1 tablespoon butter
1 tablespoon olive oil
1 small onion, thinly sliced
1 large garlic clove, minced
8 ounces fresh spinach
Kosher salt and fresh ground pepper
to taste
8 large eggs
¼ cup crumbled feta



Preheat the broiler.

Heat butter and oil on an 8-10-inch skillet over medium high heat. Add the onions and garlic. Sauté until tender – about 3-4 minutes. Add spinach and sauté until wilted.

Beat the eggs in a separate bowl. Add to the pan and stir frequently for two minutes. Lower the heat to medium low and cook until the eggs are set on the bottom. Sprinkle the top with feta.

Transfer to the broiler. Broil until the top is set and the frittata is slightly puffed – about 1-2 minutes.
