Southwest Skillet Cornbread

Southwest Skillet Cornbread

Ingredients

  • 1 tsp. Crisco®
  • 1 cup all-purpose flour
  • 1 cup white cornmeal
  • 1 egg
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1 can drained Southwest corn
  • 1 medium diced onion
  • 1 medium diced green pepper
  • 1 cup shredded cheese
  • 1/2 tsp. cayenne pepper

Directions

  1. Preheat grill to 400 degrees. Heat cast iron skillet and melt 1 tsp Crisco® to grease.
  2. In a large bowl, stir remaining ingredients together. Mix well.
  3. Pour batter into prepared cast iron skillet.
  4. Close the grill lid and bake for 30-35 minutes until center is set and top is golden brown.
