Southwest Skillet Cornbread

Southwest Skillet Cornbread

Ingredients

  • 1 tsp. Crisco®
  • 1 c. all-purpose flour
  • 1 c. white cornmeal
  • 1 egg
  • 1/2 c. vegetable oil
  • 1 c. buttermilk
  • 1 can drained Southwest corn
  • 1 medium diced onion
  • 1 medium diced green pepper
  • 1 c. shredded cheese
  • 1/2 tsp. cayenne pepper

Directions

  1. Preheat grill to 400°. Heat cast iron skillet and melt 1 tsp.
  2. Crisco® to grease.
  3. In a large bowl, stir remaining ingredients together. Mix well.
  4. Pour batter into prepared cast iron skillet.
  5. Close the grill lid and bake for 30-35 minutes until center is set and top is golden brown.
