This delicious cod fritters recipe is a hit no matter the season. Using a cast iron skillet over your gas range keeps the oil temperature steady so every fritter can be browned to perfection.
Cod Fritters Ingredients
1/2 cup vegetable oil
1 lb frozen, uncooked codfish (frozen seafood section)
6 tablespoons flour
1 tablespoon baking powder
5 tablespoons onion, finely chopped (or more to taste)
1-1/2 tablespoons garlic, minced (or more to taste)
2 tablespoons chopped parsley
1/4 teaspoon ground pepper
Cod Fritters Directions
Boil the codfish in water.
Each time the water starts to boil, drain water and add fresh water. This process will be completed three (3) times. This cooking method removes excess salt.
After the third boiling, drain water and allow codfish to cool.
Once cooled, finely shred the codfish with fingers.
Mix codfish with beaten eggs and remaining ingredients.
Form heaping teaspoons of the mixture into balls.
In a large deep skillet, heat oil to 350° and begin frying the cod balls in batches for 1 1/2 to 2 minutes on each side (or until golden).
Transfer the fritters with a slotted spoon as they are fried to paper towels to drain. Sprinkle with salt as desired and serve fritters warm.
